Blending chocolate and London Fog Latte, these muffins are the best of sweet and spice.
My husband is always asking me if I put tea in my latest kitchen experiment. He's skeptical- to put it lightly. But, I'll take a container of crumbs as high praise.
London Lava Muffins
The Ingredients
1/4 cup melted butter
2 heaping tbsp London Fog Latte, Black Tea (I got mine here)
2 eggs
1 cup brown sugar
1/2 cup ground almond
1 cup all-purpose flour (I used gluten free flour!)
1/2 cup cocoa powder
1 tbsp baking powder
1 tbsp vanilla extract
1/2 cup milk
Other Supplies: Muffin tins with liners, donut pan, or loaf pans
Directions
Preheat oven to 350F.
In a small bowl, blend the melted butter and the London Fog Latte, Black Tea. Set aside.
In another small bowl, whisk two eggs.
In a medium mixing bowl, add all dry ingredients, then fold in the butter/tea mixture, eggs, vanilla and milk. Blend until just incorporated.
Spoon into tin/pan and bake for 10-12 minutes until a toothpick inserted in center of muffin comes out clean.
