White Chocolate Matcha Raspberry Oat Muffins

I love using tea to make tasty treats. These White Chocolate Matcha Raspberry Oat Muffins won't disappoint. They are gluten free muffins that contain only natural sweeteners. And they have matcha! Not only is matcha a beautiful green color, but it has antioxidants and a slow release caffeine that helps promote a calm, alertness.




While your oven is preheating to 400F, gather your ingredients. Dump these ingredients into your blender in this order:



  • 2 cups rolled oats

  • 2 bananas

  • 2 eggs

  • 1 cup plain Greek yogurt

  • 3 tbsp maple syrup

  • 2 tbsp Sweet White Chocolate Matcha

  • 1.5 tsp baking soda

  • .5 tsp pure vanilla extract

  • a dash of salt

  • 1 cup raspberries






Then blend until smooth.



Here is a little baking tip. If you are baking with bananas, freeze then defrost them. Yes, they are mushy, but the process breaks down the natural sugars and helps them taste sweeter.


Now spray your muffin tin with oil. Distribute the batter between the 12 tins. Put 1-2 raspberries on top of each muffin, then bake until done.





I just had an eureka moment. What if I put the whole raspberry inside the batter so that it is INSIDE the muffin? I'll be trying it that way next time I make these.





Toppings

These muffins do not require a topping to be delicious, but you can take the muffins to another level with a dollop of peanut butter or whip cream.


Mix it Up

Matcha comes in a variety of flavors. Switch your matcha flavors and substitute a different fruit to create your own flavor creation. I'd love to hear what you've tried in the comments.

  • 2 cups rolled oats

  • 2 bananas

  • 2 eggs

  • 1 cup plain Greek yogurt

  • dash of salt

  • 1 cup raspberries plus 12-24 more raspberries (I used frozen)

  • Spray oil
