No Bake Oatmeal Matcha Cookies

No bake chocolate oatmeal cookie plus some matcha makes for a yummy treat







One serving of matcha has 137 times the antioxidants than a cup of green tea! Adding some to your cookies turns them from dessert into a healthy treat.









No Bake Oatmeal Matcha Cookies


The Ingredients


  • 2 cups sugar

  • 1/4 cup milk

  • 1/2 cup unsalted butter

  • 1/4 cup cocoa powder

  • 3 cups oats

  • 1 cup creamy peanut butter

  • 1 tbsp vanilla extract

  • 2 tsp matcha (I used Sweet Cinnamon Matcha from here)

Other Supplies: large pot, 1" cookie scoop, parchment paper, whisk


Directions


  1. Bring sugar, milk, butter, and cocoa powder to a boil while whisking in a large pot.

  2. Once boiling, stir in oats and allow to cook for one minute.

  3. Remove from heat then mix in peanut butter.

  4. Then add in vanilla extract and matcha.

  5. Using cookie scoop or large spoon, spoon the dough onto parchment paper.

  6. Allow it to sit until set, about 20 minutes.








This recipe makes about 45 cookies. They will probably keep for a few days, but they've never made it more than 48 hours in my house.
