Peach Cheesecake Parfait

This parfait is made with Peaches and Cream Bubbly Tea. To change up the flavor profile, switch out the Bubbly Tea and complementing fruit.


The first time I made this parfait, I expected to be the only one in my house eating it since I live with a set of sceptics. BUT, I caught my teenaged daughter hiding the last serving in the fridge so her brother wouldn't eat it before her!

Bubbly Tea is a healthy version of boba or bubble tea. Instead of starchy tapioca pearls that do not add any nutritional value, Bubbly Tea is made from dehydrated fruit and sweet basil seeds.


This layered parfait incorporates layers of softened fruit, Bubbly tea laden yogurt, and a cheesecake inspired cream cheese mixture. In about 15 minutes you can whip up a beautiful and tasty dessert that is full of vitamins and minerals AND that your kids will fight over.


I separated the parfait into 5 tea cups to make individual servings, but you could easily layer it into a trifle bowl.



 

Your List of Ingredients

  • 3 cups yogurt

  • 4 tbsp Bubbly Peaches and Cream, Fruit Tea (I got mine here)

  • 8.5 oz cream cheese, softened (about one Philadelphia block)

  • 2 cups sliced peaches (I used frozen) + a few extra slices for garnish

  • 1 tbsp sugar

  • 1 tsp cornstarch

  • 2 tbsp water

  • 1 cup crushed graham crackers

Step 1: Create Your Yogurt Layer


Mix 4 tbsp of Bubbly Peaches and Cream, Fruit Tea into 3 cups yogurt.

Divide the mixture by removing 1 cup of mixture and setting it aside.


Step 2: Create Your Cream Cheese Layer


Blend cream cheese with 2 cups of the yogurt Bubbly Peaches and Cream mixture until whipped together.







Note: I recommend using a hand mixer or stand mixer because your mixture will be quite thick.











Step 3: Create Your Fruit Layer




In a small saucepan, bring peaches and sugar to a soft boil for 5-10 minutes until peaches are soft.

Whisk together cornstarch and water and add to hot fruit mixture.

Mash and let cool.




Note: If you choose to use a different fruit the cook time will vary.





Step 4: It's Layer Time


Layer ingredients in 5 small dessert dishes (or one medium trifle dish) following this order:


1st layer- graham crackers

2nd layer- cream cheese mixture

3rd layer - fruit

4th layer- top with 1 cup of the reserved yogurt mixture

5th Layer - Top with garnish fruit and enjoy



 

Parfaits Aren't Perfect




My favorite thing about parfaits is that there is no expectation of perfection. The uneven layers and occasional smear on the edge of your dish add to the visual appeal.
